Triple-onion baked potatoes
Ingredients/Components
- milk - 2 tsp
- sour cream - 1/2 c
- shredded Cheddar cheese - 1/2 c
- diced American cheese - 1 c
- green onions, finely sliced - 4 item
- sliced bacon, diced - 1 lb
- large baking potatoes - 4 item
- finely chopped red onion - 1/2 c
- finely chopped yellow onion - 1/2 c
How to make triple-onion baked potatoes:
Bake potatoes at 400° for 1 hour or until tender.Meanwhile, in a large skillet, cook the bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 1 teaspoon of drippings. In the drippings, saut red and yellow onions until tender. Set aside. When potatoes are cool enough to handle, cut in half lengthwise. Scrape out pulp, leaving 1/8-inch shell.
In mixing bowl, beat the pulp, sour cream and milk until creamy. Stir saut?Šed onions, American cheese and 1 cup of bacon. Spoon into potato shells. Place on baking sheet. Bake at 400° for 25 minutes. Sprinkle with Cheddar cheese, green onions and remaining bacon. Bake 5 to 10 minutes longer or until cheese is melted. Yields 8 servings.
