Tortellini soup
Ingredients/Components
- olive oil - 1/3 c
- large leeks, sliced thin - 2 item
- large carrots, chopped - 3 item
- large stalks celery, chopped - 3 item
- whole plum tomatoes - 28 oz
- beef bouillon cubes - 6 item
- tortellini - 10 oz
- cannellini beans, rinsed - 19 oz
- Italian green beans - 10 oz
- Italian parsley, minced - 1/2 c
- dried basil leaves, minced - 1 tsp
How to make tortellini soup:
In a large pot, heat oil until hot. Add leeks and saute 5 minutes. Add carrots and celery. Cover; simmer 5 minutes. Stir occasionally. Add tomatoes and liquid; simmer 10 minutes.In a large pan, bring 8 cups of water to a boil. Add bouillon cubes. When dissolved, add tortellini; cook 6 minutes. Add to cooked vegetables, including liquid. Add beans, green beans, parsley and basil; simmer 5 minutes or until tortellini is done.
