Tomato preserves
Ingredients/Components
- granulated sugar
- lemon juice - 1/4 c
- grated lemon rind
- box Sure-Jell fruit pectin - 1 item
- prepared tomatoes - 3 c
How to make tomato preserves:
Using regular Sure-Jell follow directions for 5 to 8 ounce cups scald, peel and chop tomatoes (approximately 2 1/2 pounds). Cover and simmer 10 minutes, stirring occasionally. Measure 3 cups into 6 to 8 ounce quart saucepan. Add lemon juice and rind. Measure sugar and set aside. Stir n Sure-Jell into mixture and bring to a boil over high heat, stirring. Instantly add sugar, stir to full boil. Boil hard for 1 minute. Stir occasionally. Skim off foam. Ladle into jars, leaving 1/4 inch atop. Fill jars with hot tomatoes.
