Ingredients/Components

  • salt - 1/4 tsp
  • water - 1 Tbsp
  • leaf lettuce - 1 item
  • pepper - 1/4 tsp
  • clove garlic, minced - 1 item
  • white wine vinegar - 3 Tbsp
  • sliced green pepper - 3/4 c
  • olive oil - 1 Tbsp
  • medium tomatoes, cut into wedges - 2 item
  • dried oregano - 1/4 tsp
  • dried basil - 1/2 tsp
  • thinly sliced green onions - 1/3 c
  • thinly sliced cucumber - 2 c
  • sliced, fresh mushrooms - 1/2 c

How to make tomato-cucumber salad:

Sprinkle salt over cucumber; toss gently. Let stand 30 minutes. Drain cucumber slices and press dry between paper towels. Combine cucumber, green pepper and next 3 ingredients in a bowl; set aside.

Combine vinegar and the next 6 ingredients in a small jar; cover tightly and shake vigorously. Drizzle over vegetables; toss gently. Cover and chill 3 to 4 hours. Toss gently before serving and arrange on lettuce leaves. Yields 6 servings, 44 calories (53% from fat) per 1-cup serving.
