Tofu creole



Ingredients/Components
- sugar - 1 tsp
- vegetable oil - 2 Tbsp
- bay leaf - 1 item
- oregano - 1 tsp
- stalks celery - 4 item
- tomato sauce - 1/2 c
- dash of cayenne - 1 item
- dash of black pepper - 1 item
- to 2 cloves garlic - 1 item
- dash of red pepper - 1 item
- large sweet onion - 1 item
- dash of chili powder - 1 item
- sweet pepper, chopped - 1 item
- button mushrooms - 1/2 c
- vinegar or lemon - 2 Tbsp
- tofu, dried and diced - 1 pkg
- to 10 plum tomatoes - 8 item
- dashes celery salt - 2 item
How to make tofu creole:
Saute sliced celery with leaves on, chopped onion and chopped sweet pepper for 5 minutes in vegetable oil. Add tofu, minced garlic and mushrooms and cook 2 minutes. Add all other ingredients and bring to a boil. Simmer until done, about 30 minutes. Serves 4.Recipe categories: Main dish, Southern u.s., Creole.
