Ingredients/Components

  • sugar - 1 tsp
  • vegetable oil - 2 Tbsp
  • bay leaf - 1 item
  • oregano - 1 tsp
  • stalks celery - 4 item
  • tomato sauce - 1/2 c
  • dash of cayenne - 1 item
  • dash of black pepper - 1 item
  • to 2 cloves garlic - 1 item
  • dash of red pepper - 1 item
  • large sweet onion - 1 item
  • dash of chili powder - 1 item
  • sweet pepper, chopped - 1 item
  • button mushrooms - 1/2 c
  • vinegar or lemon - 2 Tbsp
  • tofu, dried and diced - 1 pkg
  • to 10 plum tomatoes - 8 item
  • dashes celery salt - 2 item

How to make tofu creole:

Saute sliced celery with leaves on, chopped onion and chopped sweet pepper for 5 minutes in vegetable oil. Add tofu, minced garlic and mushrooms and cook 2 minutes. Add all other ingredients and bring to a boil. Simmer until done, about 30 minutes. Serves 4.
