Toffee almond sandies
Ingredients/Components
- butter, softened no substitutes - 1 c
- sugar - 1 c
- powdered sugar - 1 c
- vegetable oil - 1 c
- eggs - 2 item
- almond extract - 1 tsp
- all-purpose flour
- whole-wheat flour - 1 c
- baking soda - 1 tsp
- cream of tartar - 1 tsp
- salt - 1 tsp
- chopped almonds I use pecans - 2 c
- pkg - 1 oz
- additional sugar to roll cookies in - 1 item
How to make toffee almond sandies:
In mixing bowl cream butter and sugars. Add oil, eggs and extract. Mix well. Combine flours, baking soda, cream of tartar and salt. Gradually add to creamed mixture. Stir in nuts and toffee bits. Shape into 1-inch balls and roll in sugar. Place on ungreased baking sheet and flatten with fork. Bake at 350° for 12 to 14 minutes or until lightly browned.
