  • eggs - 4 item
  • vanilla - 2 tsp
  • chopped pecans - 2 c
  • milk - 1 c
  • salt - 1/2 tsp
  • butter
  • baking powder - 2 tsp
  • box powdered sugar - 1 item
  • sifted plain flour - 3 c
  • toasted pecans - 1 item
  • cold coffee - 4 6

How to make toasted butter pecan cake:

Butter Pecan Icing:1/4 c. butter1 box powdered sugar1 tsp. vanilla4 to 6 Tbsp. cold coffee toasted pecans Toast pecans in 1/4 cup butter in oven at 300° until brown. Sift flour with baking powder and salt. Cream 1 cup butter, gradually adding sugar. Blend in eggs, beating well after each addition. Add dry ingredients, alternating with milk, beginning and ending with dry ingredients. Blend well and stir in vanilla and 1 1/2 cups toasted pecans (save 1/2 cup for icing). Pour into 3 (9-inch) pans which have been greased and floured. Bake at 350° for 25 to 30 minutes. Cool and frost with Butter Pecan Frosting.
