Thumbprint cookies
Ingredients/Components
- sugar - 1/3 c
- vanilla - 1 tsp
- salt - 1/4 tsp
- chopped nuts - 3/4 c
- flour
- butter - 2/3 c
- egg yolks - 2 item
- slightly beaten egg whites - 2 item
- cherry or strawberry preserves - 1/3 c
How to make thumbprint cookies:
Stir together flour and salt. Beat butter for 30 seconds. Add sugar and beat until fluffy. Add egg yolks and vanilla; beat well. Add dry ingredients to beaten mixture, beating until well combined. Cover and chill 1 hour.Shape into 1-inch balls; roll in egg whites, then into chopped nuts. Place 1 inch apart on an ungreased cookie sheet. Press down centers with thumb. Bake in a 350° oven for 15 to 17 minutes. Just before serving, fill with preserves. Makes 36.
