Ingredients/Components
- vanilla - 1 tsp
- all-purpose flour - 1 c
- white sugar - 1/4 c
- lemon extract - 1/4 tsp
- raspberry jam - 1 item
- egg yolk, unbeaten - 1 item
- unsalted fat - 1/2 c
How to make thumb cookies:
Cream vanilla and lemon extract into the fat; add sugar gradually. Beat eggs into the mixture thoroughly. Put flour in all at once. Stir to a thick dough. Shape the dough into small balls, using about 1 teaspoon of the mixture each time. Put on an ungreased cookie sheet. Make a dent in each ball with your floured thumb. Place a small amount of raspberry jam in each dent. Bake cookies about 15 minutes at 400°. Makes about 24 cookies.Recipe categories: Drop cookies, Cookie and brownie, Hand Formed cookies.
