Texas tortilla soup
Ingredients/Components
- stick butter - 1/2 item
- oil - 1/2 c
- large onion, chopped - 1 item
- garlic cloves, minced - 4 item
- large carrots, diced - 2 item
- ribs celery, diced - 6 item
- chicken, cooked and shredded - 1 lb
- ground cumin - 1 tsp
- chili powder - 1 tsp
- salt - 1 tsp
- lemon pepper - 1 tsp
- dashes Tabasco sauce - 3 item
- flour - 1/2 c
- can tomatoes - 14 oz
- cans chicken broth - 4 1/2
- tortilla chips - 1 item
- grated cheese - 1 item
- low-fat yogurt - 1 item
How to make texas tortilla soup:
Heat butter and oil in large kettle. Saute onion, garlic, carrots and celery. Simmer 15 minutes. Add cumin, chili powder, salt, lemon pepper, Tabasco sauce and flour. Add tomatoes and chicken broth. Simmer 1 hour. Add cooked chicken and heat thoroughly.To serve, place tortilla chips in bowl and add soup. Top with yogurt, cheese and avocado. Serves 6 to 8.
