Ingredients/Components
- salt - 2 tsp
- brown sugar - 4 tsp
- vegetable oil - 1 Tbsp
- pepper - 1/8 tsp
- cloves garlic, minced - 2 item
- chili powder - 6 Tbsp
- chopped onions - 1 c
- oregano - 2 Tbsp
- can tomato paste - 1 oz
- tomatoes - 1 can
- cumin - 2 tsp
- ground beef lean - 1 lb
- large onions, sliced - 3 item
- large green pepper, chopped - 1 item
- chili powder to taste - 1 2
- hot sausage - 1 lb
- regular rice uncooked - 1/2 c
- chuck steak, cut into 1/2 inch cubes - 2 lb
- ground beef low-fat - 2 lb
- jalapeno pepper, chopped fine amount to taste - 1 item
- cans canned tomatoes undrained, chopped - 2 oz
- cans red beans or pinto beans - 3 oz
How to make texas hash:
In a large Dutch oven, brown steak in oil. Remove meat. Brown the ground beef and sausage together, mixing well and crumbling fine. Remove meat. Add to the drippings in the Dutch oven the onions, green pepper, garlic and jalapeno pepper and saute until tender. Add the browned meat and remaining ingredients. Bring chili to boiling point, then cut back heat to very low or simmer and continue cooking for at least 4 hours. The longer the chili sets, the more flavorous it becomes.Recipe found in Helen Wilkins computer software after her death in June 1992.
