Tex-mex dip
Ingredients/Components
- sour cream - 1/2 c
- salt - 1/4 tsp
- lemon juice - 1 Tbsp
- shredded sharp Cheddar cheese - 4 oz
- green onions, chopped - 1/2 c
- taco seasoning mix - 1 pkg
- medium avocados - 2 item
- can refried beans - 1 oz
- fresh tomatoes, chopped - 2 item
- can chopped ripe olives, drained - 1 1/2
- large tortilla chips - 1 item
How to make tex-mex dip:
Peel and mash avocado in bowl with lemon juice and salt. Combine sour cream and mayonnaise with taco seasoning in another bowl. (I use 1/2 of the package of taco seasoning in the sour cream mixture and 1/2 in the refried beans.)To assemble, spread beans in shallow rectangular dish; frost with avocado mixture. Top with seasoned sour cream. Sprinkle with chopped onions, tomatoes and olives. Cover with shredded cheese. Serve with chips. Serves 6 to 8.
