• egg, slightly beaten - 1 item
  • cold water - 1/2 1
  • baking powder - 1 tsp
  • freshly ground pepper - 1/2 tsp
  • rice flour - 3/4 c
  • tamari sauce - 2 tsp
  • polyunsaturated oil for frying - 2 4
  • fresh veggies, cut in 1/4-inch slices - 6 c

How to make tempura:

Stir together flour and baking powder in a bowl. Add tamari sauce, water and egg. Stir until smooth (if too thick, add more liquid). Pour oil into a large pan or wok heated to 375°.

Dip 6 cups of sliced fresh veggies (zucchini, broccoli, cauliflower, mushrooms, bell pepper rings, onion rings, etc.) in batter to coat. Carefully place veggies in oil a few at a time for 2 or 3 minutes in oil. Fry until golden brown.

Herbs can be added to basic recipe: basil, minced garlic, etc.

Beer can replace water.
