Tapioca pudding


Ingredients/Components
- sugar
- vanilla - 1/2 tsp
- salt - 1/4 tsp
- skim milk - 2 c
- slightly beaten eggs - 2 item
- quick cooking tapioca - 2 Tbsp
How to make tapioca pudding:
Combine milk, tapioca and sweetener and salt. Let stand 5 minutes. Add 2 slightly beaten egg yolks. Bring to a boil over medium heat, stirring constantly. Remove from heat (mixture will be thin). Add vanilla. Beat 2 egg whites to stiff peaks. Gradually fold in hot mixture. Chill. Serves 8.Recipe categories: Desserts, Low protein, Puddings and mousses.
