Taco salad



  • pkg - 1 lb
  • Velveeta cheese - 1 lb
  • diced onion
  • diced green pepper - 1 c
  • ground beef
  • diced celery - 1 c
  • large firm tomatoes - 2 item
  • head lettuce - 1 item
  • cloves garlic, diced optional - 3 item
  • can Ortega tomatoes and green chili peppers - 1 oz
  • salt, chili powder and ground cumin to taste - 1 item

How to make taco salad:

Fry the ground beef and small amount of oil until brown. Saute onion, celery and green pepper in oil. Combine the meat and vegetables; simmer for 15 minutes. Season with salt. Place chili powder and ground cumin in top of double boiler. Melt cheese; add can of tomatoes to spices and chili pepper. You may only add 1/2 can, if desired. Cut lettuce coarsely; cut tomatoes in chunks. Mix together. Add Fritos; mix all ingredients, except melted cheese mixture. Top with hot cheese; mix again. Serve immediately. Serves 10 to 12.
