Ingredients/Components

  • boiling water
  • chopped fresh parsley - 1 c
  • salt and pepper - 1 item
  • Feta cheese - 1 item
  • chopped scallions - 1/2 c
  • medium tomatoes, chopped - 2 item
  • cloves garlic, chopped fine - 2 item
  • good olive oil - 1/4 c
  • lemon juice - 1/4 c
  • bulgar wheat - 1 c
  • fresh mint, leave choppy - 1 c

How to make tabouleh:

If using raw bulgur, soak 3 hours in boiling water. Drain. Add salt, lemon juice, chopped scallion, olive oil, garlic and chill in refrigerator at least 2 hours. Add tomato, parsley and mint; place in lettuce-lined bowl. Trim with crumbled Feta cheese.
