Sweet potato souffle



  • sugar
  • eggs - 2 item
  • chopped pecans - 1/2 c
  • milk - 1 c
  • brown sugar - 1/2 c
  • butter - 1/4 c
  • corn flakes or Rice Krispies - 3/4 c
  • can sweet potatoes, mashed - 1 lb
  • each: nutmeg and cinnamon - 1/2 tsp
  • Mixture will be thin

How to make sweet potato souffle:

Combine ingredients well. Mixture will be thin. Pour into buttered baking dish. Bake at 300° for 30 minutes.Topping:1/2 c. very soft butter1/2 c. brown sugar1/2 c. chopped pecans3/4 c. corn flakes or Rice Krispies Mix all together and spread over potato mixture. Bake 15 minutes longer.
