Sweet potato souffle
Ingredients/Components
- sugar
- chopped pecans - 1/2 c
- salt - 1 tsp
- evaporated milk - 1/2 c
- nutmeg - 1/2 tsp
- shredded coconut - 1/2 c
- raisins - 1/2 c
- marshmallows - 1 item
- eggs, slightly beaten - 2 item
- stick butter or margarine - 1 item
- sweet potatoes - 4 lb
- lemon, grated rind and juice - 1 item
How to make sweet potato souffle:
Peel and slice potatoes and boil in salted water. Cook until tender. Mash potatoes. Mix in all ingredients except marshmallows and pour into greased casserole dish. Bake at 350° for 30 minutes. Cover top with marshmallows just before removing from oven. Brown and serve.Recipe categories: Side dish, Potato, Vegetables.
