  • salt - 1 item
  • honey - 1 Tbsp
  • Worcestershire sauce - 1 tsp
  • chopped fresh parsley - 1/4 item
  • Dijon mustard - 2 Tbsp
  • olive oil - 3/4 c
  • minced garlic - 1 tsp
  • ground pepper - 1 item
  • sweet potatoes, peeled and cut into 1/2-inch dice - 2 lb

How to make sweet potato salad:

In a large pot, cover sweet potatoes with water. Add salt and bring to a boil over moderately high heat. Cook until just tender, about 10 minutes; drain well. Refresh with cold water and drain again.

Whisk together the mustard, honey, garlic and Worcestershire sauce. Gradually whisk in the olive oil. Fold in the sweet potatoes and season with salt and pepper. Stir in the parsley and serve warm or at room temperature. The potato salad can be refrigerated, covered, for up to 2 days. Let return to room temperature before serving. Serves 8 to 10 people.
