  • grated raw sweet potatoes - 4 c
  • ground ginger - 1/2 tsp
  • cloves - 1/2 tsp
  • firmly packed brown sugar - 2 c
  • grated lemon peel - 2 tsp
  • cinnamon - 1 tsp
  • salt - 1 tsp
  • eggs, well beaten - 4 item
  • chopped pecans for topping - 1 c

How to make sweet potato pudding:

Preheat oven top 350°. Combine all ingredients, except eggs and pecans, until well mixed. Add eggs and stir until well combined; pour into a 3-quart casserole dish. Top with pecans. Bake 1 hour. Makes 10 servings, about 480 calories each.
