  • butter, softened - 1 c
  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • salt - 1/4 tsp
  • chopped nuts - 1/2 c
  • flour - 3 c
  • nutmeg - 1/2 tsp
  • flaked coconut - 1/2 c
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • cooked mashed sweet potatoes

How to make sweet potato pound cake:

Cream butter; gradually add sugar, beat well. Add eggs, one at a time, beating well after each one. Add sweet potatoes, beat well. Combine flour, baking powder, soda, cinnamon, nutmeg and salt; gradually add to sweet potato mixture, beating well after each addition. Batter will be stiff. Stir in vanilla, coconut and pecans. Spoon batter into a well-greased 10-inch tube pan. Bake at 350° for 1 hour and 15 minutes or until cake tests done. Cool 15 minutes. Remove from pan. Let cool completely.

May be glazed or frosted with lemon or orange flavored topping.
