Sweet potato pound cake
Ingredients/Components
- butter, softened - 1 c
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- salt - 1/4 tsp
- chopped nuts - 1/2 c
- flour - 3 c
- nutmeg - 1/2 tsp
- flaked coconut - 1/2 c
- baking powder - 2 tsp
- baking soda - 1 tsp
- cooked mashed sweet potatoes
How to make sweet potato pound cake:
Cream butter; gradually add sugar, beat well. Add eggs, one at a time, beating well after each one. Add sweet potatoes, beat well. Combine flour, baking powder, soda, cinnamon, nutmeg and salt; gradually add to sweet potato mixture, beating well after each addition. Batter will be stiff. Stir in vanilla, coconut and pecans. Spoon batter into a well-greased 10-inch tube pan. Bake at 350° for 1 hour and 15 minutes or until cake tests done. Cool 15 minutes. Remove from pan. Let cool completely.May be glazed or frosted with lemon or orange flavored topping.
