- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- chopped pecans - 1/2 c
- flour - 3 c
- butter - 1 c
- nutmeg - 1/2 tsp
- soda - 1/4 tsp
- flaked coconut - 1/2 c
- juice of 1 lemon
- grated rind of 1 orange
- mashed, cooked sweet potatoes
- juice of 1 orange
- grated rind of 1 lemon
- Add eggs one at a time, beating well after each
How to make sweet potato pound cake:
Cream butter and sugar; add sweet potatoes and beat until light and fluffy. Add eggs one at a time, beating well after each. Combine dry ingredients and stir into creamed mixture; add vanilla, nuts and coconut. Pour mixture into greased 10-inch tube pan and bake at 350° for 1 hour and 15 minutes or until cake tests done.
