Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour - 3 c
- nutmeg - 1/2 tsp
- baking powder - 2 tsp
- baking soda - 1 tsp
- powdered sugar - 1 lb
- sticks butter - 2 item
- mashed sweet potatoes
- juice and grated rind of 1 lemon
- Add sweet potatoes and beat until light and fluffy
How to make sweet potato pound cake:
Cream butter and sugar. Add sweet potatoes and beat until light and fluffy. Add eggs, one at a time, mixing 1 minute after each addition. Combine flour, baking powder, salt, baking soda, cinnamon and nutmeg. Add to potato mixture; stir well. Add vanilla and nuts. Pour into greased and floured pan. Bake at 350° for 1 1/4 hours (use tube pan).
