  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1/2 c
  • flour - 3 c
  • nutmeg - 1/2 tsp
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • powdered sugar - 1 lb
  • sticks butter - 2 item
  • mashed sweet potatoes
  • juice and grated rind of 1 lemon
  • Add sweet potatoes and beat until light and fluffy

How to make sweet potato pound cake:

Cream butter and sugar. Add sweet potatoes and beat until light and fluffy. Add eggs, one at a time, mixing 1 minute after each addition. Combine flour, baking powder, salt, baking soda, cinnamon and nutmeg. Add to potato mixture; stir well. Add vanilla and nuts. Pour into greased and floured pan. Bake at 350° for 1 1/4 hours (use tube pan). Ice cake while hot.Frosting: juice and grated rind of 1 orange juice and grated rind of 1 lemon1 lb. powdered sugar Mix and pour over hot cake.
