Sweet potato pie



  • sugar - 1/2 c
  • vanilla - 1 tsp
  • salt - 1/4 tsp
  • evaporated milk - 3/4 c
  • butter or margarine, softened - 1/3 c
  • eggs, lightly beaten - 2 item
  • ground cinnamon - 1/2 tsp
  • ground nutmeg - 1/2 tsp
  • mashed sweet potatoes - 2 c
  • unbaked pastry shell 9-inch - 1 item

How to make sweet potato pie:

In a mixing bowl, cream the butter and sugar. Add eggs; mix well. Add milk, sweet potatoes, vanilla, cinnamon, nutmeg and salt; mix well. Pour into pie shell. Bake at 425° for 15 minutes. Reduce heat to 350°; bake 35 to 40 minutes longer or until a knife inserted near the center comes out clean. Cool. Store in refrigerator. Yields 6 to 8 servings.
