Sweet potato pie
Ingredients/Components
- sugar - 2 c
- vanilla extract - 1 tsp
- buttermilk - 1 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- butter or margarine, softened - 2 Tbsp
- ground cloves - 1/4 tsp
- ground cinnamon - 1 tsp
- ground nutmeg - 1/4 tsp
- ground allspice - 1/4 tsp
- eggs, slightly beaten - 3 item
- cooked, mashed sweet potatoes - 3 c
- whipped topping optional - 1 item
- coarsely chopped pecans optional - 1 item
- unbaked 9-inch pastry shells - 2 item
How to make sweet potato pie:
Combine first 9 ingredients, beat at medium speed with an electric mixer until smooth. Stir in buttermilk, eggs and vanilla. Pour sweet potato mixture in pie shells. Bake at 400° for 10 minutes. Reduce heat to 350° and bake for 35 minutes. Place foil on edges if pastry is browning too much. Cool completely.
