Ingredients/Components
- sugar - 1/2 c
- vanilla - 1 tsp
- chopped pecans - 1 c
- evaporated milk - 1/3 c
- eggs, beaten - 2 item
- light corn syrup - 1 c
- margarine, melted - 2 tsp
- large unbaked pie shell homemade, if possible - 1 item
- Sweet Potato Filling:1 small to medium sweet potato, cooked and mashed
- Spread in unbaked pie shell
How to make sweet potato-pecan pie:
Sweet Potato Filling:1 small to medium sweet potato, cooked and mashed1/2 c. sugar2 eggs, beaten1 tsp. vanilla1/3 c. evaporated milk2 tsp. margarine, melted Combine ingredients, blending well. Spread in unbaked pie shell.Pecan Filling:3 eggs1 c. sugar1 c. light corn syrup1/2 c. margarine, melted2 tsp. vanilla1 c. chopped pecans Beat eggs and sugar together. Blend in margarine, corn syrup and vanilla. Stir in pecans and mix well.
