Ingredients/Components

  • sugar - 1/2 c
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • milk - 1/4 c
  • melted margarine - 1/2 c
  • eggs, beaten - 2 item
  • flaked coconut - 1 c
  • all-purpose flour - 1/3 c
  • firmly packed brown sugar - 1 c
  • margarine, melted - 1/3 c
  • cooked, mashed sweet potatoes - 3 c

How to make sweet potato crunch:

Combine the first 6 ingredients, mixing well. Spoon into a lightly greased 8-inch square baking dish. Combine remaining ingredients; sprinkle over top of sweet potatoes. Bake at 375° for about 25 minutes, or until golden brown. Makes 6 servings.
