Sweet potato crunch
Ingredients/Components
- sugar - 1/2 c
- vanilla - 1 tsp
- chopped pecans - 1 c
- milk - 1/4 c
- melted margarine - 1/2 c
- eggs, beaten - 2 item
- flaked coconut - 1 c
- all-purpose flour - 1/3 c
- firmly packed brown sugar - 1 c
- margarine, melted - 1/3 c
- cooked, mashed sweet potatoes - 3 c
How to make sweet potato crunch:
Combine the first 6 ingredients, mixing well. Spoon into a lightly greased 8-inch square baking dish. Combine remaining ingredients; sprinkle over top of sweet potatoes. Bake at 375° for about 25 minutes, or until golden brown. Makes 6 servings.Recipe categories: Low sodium, Potato, Vegetables.
