Ingredients/Components

  • warm water - 1/2 c
  • biscuit mix
  • sweet potatoes - 3 lb
  • sugar, divided use - 2 c
  • cinnamon or allspice - 1 tsp
  • margarine or butter, sliced - 3 Tbsp
  • milk or potato cooking water - 3 c
  • Crisco shortening or soft margarine - 1/3 c
  • extra sugar and melted margarine for top - 1 item

How to make sweet potato cobbler:

Pastry:2 c. biscuit mix1/3 c. Crisco shortening or soft margarine1/2 c. warm water extra sugar and melted margarine (for top) Boil sweet potatoes until tender; peel, slice or cut into wedges.

Prepare pastry. Mix biscuit mix and shortening together until crumbly. Add enough water to make a dough. Roll out 2/3 of dough and place in greased 2-quart casserole dish.

Arrange potatoes in dish on top of pastry. Combine one cup of sugar and cinnamon and sprinkle on top of potatoes. Dot with sliced margarine. Heat the milk or potato cooking water and remaining one cup sugar and pour over potatoes, sugar, cinnamon and butter. Roll out remaining 1/3 of the dough and place on top of casserole. Punch a few holes in crust to let steam escape. Brush with melted butter and sprinkle with sugar. Bake at 400° for 30 minutes or until browned.
