Ingredients/Components

  • sugar - 1 c
  • vanilla - 1 tsp
  • stick margarine - 1 item
  • brown sugar - 1 c
  • coconut - 1 c
  • melted margarine - 1/4 c
  • eggs, beaten - 2 item
  • plain flour - 1/2 c
  • mashed potatoes - 3 c
  • milk or cream - 1/4 c
  • pecans, crushed

How to make sweet potato casserole:

Topping:1 c. pecans, crushed1 stick margarine1/2 c. plain flour1 c. brown sugar Mix first 7 ingredients and put in a baking dish. Mix topping ingredients well and spread over sweet potatoes. Bake 20 to 30 minutes in a 350° oven until brown.

Note: This may be mixed the night before, kept in refrigerator and baked the next morning.
