Sweet potato casserole
Ingredients/Components
- cinnamon - 1 tsp
- chopped pecans - 1/4 c
- packed brown sugar - 1/4 c
- salt - 1/2 tsp
- water - 1 tsp
- nutmeg - 1/4 tsp
- miniature marshmallows
- oleo - 1/4 c
- can crushed pineapple, drained - 1 oz
- large cans sweet potatoes - 2 item
How to make sweet potato casserole:
Topping:1 Tbsp. packed brown sugar1 tsp. cinnamon1 1/2 c. miniature marshmallows1 tsp. water1/4 tsp. nutmeg1/4 c. chopped pecans Put potatoes in a 2-quart casserole dish. Add brown sugar, oleo and salt. Mash together, then stir in pineapple. Microwave on High until oleo is melted. Stir and set aside.Mix topping. Microwave on High until oleo is melted. Add marshmallows; toss to coat. Top sweet potato mixture with marshmallows. Microwave until marshmallows are melted and potatoes are heated, about 2 to 3 minutes. Sprinkle with nuts.
