Sweet potato casserole
Ingredients/Components
- sugar - 1/2 c
- eggs - 2 item
- vanilla - 1 tsp
- packed brown sugar - 1/3 c
- milk - 1/3 c
- butter - 1/2 c
- all-purpose flour - 2 Tbsp
- finely chopped pecans - 1/3 c
- medium sweet potatoes - 6 item
How to make sweet potato casserole:
Cook sweet potatoes in boiling water for 45 minutes or until tender. Let cool to touch; peel and mash. Combine potatoes, sugar, eggs, vanilla, milk and 1/2 cup butter. Beat at medium speed until smooth. Spoon into a lightly greased 12 x 8 x 2-inch baking dish, then combine brown sugar, pecan, flour and 2 tablespoons of butter; sprinkle mixture over casserole.
