Sweet potato casserole
Ingredients/Components
- sweet potatoes, mashed - 3 c
- egg yolks, well beaten - 2 item
- white sugar - 1 c
- pinch of salt - 1 item
- margarine, melted - 1/2 c
- egg whites, beaten - 2 item
- vanilla - 1 tsp
- Thoroughly fold in egg whites
- self-rising flour - 1/2 c
- coconut - 1 c
- pecans, chopped - 1 c
How to make sweet potato casserole:
Mix potatoes, egg yolks, sugar, vanilla, salt and butter. Thoroughly fold in egg whites. Put in a baking dish and cover with topping. Bake in 350° oven for 25 minutes.Topping:1 c. brown sugar1/2 c. self-rising flour1 c. coconut1/3 c. margarine, melted1 c. pecans, chopped Mix all together and spread on top of filling. If you don't have self-rising flour, use Bisquick or pancake mix or add 1/2 teaspoon baking powder and a pinch of salt to 1/2 cup all-purpose flour.Recipe categories: Side dish, Potato, Casseroles.
