Sweet potato casserole
Ingredients/Components
- or 5 sweet potatoes, cooked - 4 item
- egg - 1 item
- pinch of salt - 1 item
- cinnamon - 1/2 tsp
- sugar - 1/2 c
- stick butter, melted - 1/2 item
- Topping:20 to 25 Ritz crackers, crumbled
- chopped pecans - 1/2 c
- brown sugar - 1 c
How to make sweet potato casserole:
Topping:20 to 25 Ritz crackers, crumbled1/2 c. chopped pecans1 stick butter, melted1 c. brown sugar Preheat oven to 350°. Drain sweet potatoes and mash. Add egg, sugar, salt, cinnamon and melted butter. Mix thoroughly and place in 8 x 10 or 9 x 13 dish.Mix topping ingredients until crumbly. Sprinkle over potatoes. Bake 30 minutes in a preheated oven.
This can be made ahead, but don't put the topping on until ready to bake.
