  • vanilla - 1 tsp
  • pkg - 1 oz
  • chopped nuts - 1 c
  • nutmeg - 1 tsp
  • self-rising flour - 3 c
  • cooking oil
  • box confectioners sugar - 1 item
  • small can crushed pineapple - 1 item
  • grated sweet potatoes - 2 c
  • Add oil and vanilla; mix, adding eggs

How to make sweet potato cake:

Mix flour, sugar and spices. Add oil and vanilla; mix, adding eggs. Next, add pineapple, potatoes and nuts. Bake at 350° for 30 minutes in 3 greased and floured 9-inch cake pans.Icing:1 stick margarine1 c. chopped nuts1 box confectioners sugar1 (8 oz.) pkg. cream cheese1 tsp. vanilla Cream margarine and cheese; add sugar and vanilla. Add nuts to mixture and frost cake.
