Sweet potato bread
Ingredients/Components
- eggs - 2 item
- chopped pecans - 1/4 c
- salt - 1/2 tsp
- baking powder
- firmly packed brown sugar - 1/2 c
- ground nutmeg - 1/4 tsp
- skim milk - 3 Tbsp
- ground allspice - 1/4 tsp
- grated orange rind - 1 tsp
- vegetable cooking spray - 1 item
- mashed, cooked sweet potatoes - 1 c
- unsalted margarine, melted - 1/4 c
- unbleached or all-purpose flour - 2 c
How to make sweet potato bread:
Combine first 5 ingredients in large bowl; set aside. Combine potatoes, sugar, margarine, milk, eggs, orange rind and nuts, beating well. Add to dry ingredients, stirring just until moistened. Pour batter into a 9 x 5 x 3-inch loaf pan coated with cooking spray. Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pan for 10 minutes; remove from pan and cool completely. Yield: 1 loaf or 18 (1/2-inch) slices. Contains 122 calories per slice.
