Sweet potato balls



Ingredients/Components
- brown sugar - 2/3 c
- large marshmallows - 8 item
- orange juice - 4 6
- grated orange rind - 1 tsp
- large sweet potatoes - 4 item
- flaked coconut or crushed pecans - 2 c
How to make sweet potato balls:
Cook sweet potatoes until tender. Cool, peel and mash. Measure exactly 4 cups. Stir in brown sugar, orange rind and orange juice. Mix well. Chill mixture until stiff enough to handle. Shape 1/4 c. potato mix around 1 large marshmallow. Roll in coconut or pecans and place in 9 x 13-inch baking dish. Bake at 350° for 20 minutes. May be frozen at this point.
