Sweet potato bake
Ingredients/Components
- chopped pecans - 1/2 c
- salt - 1/4 t
- butter - 2 T
- cornstarch - 1 1/2
- firmly packed brown sugar - 1 c
- hot water - 1/2 c
- grated orange peel - 2 T
- ground cinnamon - 1/8 t
- apricot nectar - 1 c
- sweet potatoes - 3 lbs
How to make sweet potato bake:
Cook peeled potatoes in boiling water until tender but not mushy. Drain and cool. Combine next four ingredients in medium saucepan. Stir in apricot nectar, hot water, and orange peel. Bring to full boil, stirring constantly. Remove from heat. Stir in butter. Cool slightly; stir in pecans. Cut sweet potatoes in halves and place in casserole. Pour sauce over potatoes so all are glazed. If desired, cover and refrigerate overnight. Bake, covered, in 375° oven for 25 minutes, or until sauce is bubbling.
