Sweet pickles
Ingredients/Components
- sugar - 6 c
- salt - 3 Tbsp
- vinegar
- celery seed
- mustard seed - 1 Tbsp
- whole allspice - 1 Tbsp
- cucumber slices 1/4-inch thick, unpeeled - 4 qt
How to make sweet pickles:
Simmer cucumber slices in 4 cups vinegar with salt, mustard seed and 1/4 cup sugar until slices turn slightly yellow (about 15 minutes). Cook in covered pot. Do not overcook. Drain; discard liquid. Spoon slices into hot, sterilized jars. Bring to boil 3 1/3 cups vinegar, 5 3/4 cups sugar, celery seed and allspice. Pour over pickles. Seal at once and process in boiling water bath in canner 5 minutes. Remove jars. Makes 5 pints.Recipe categories: American, Condiments, etc., Vegetables.
