Sweet pickle relish
Ingredients/Components
- sugar - 1-3/4 c
- chopped onion - 2 c
- green bell pepper, chopped - 1 item
- sweet red pepper, chopped - 1 item
- pickling salt - 1/4 c
- mustard seeds - 1-1/2 tsp
- chopped cucumbers - 4 c
- celery seeds - 1-1/2 tsp
- cider vinegar 5% acidity - 1 c
How to make sweet pickle relish:
Combine first 4 ingredients; sprinkle with salt, and cover with cold water; let stand 2 hours; drain. Combine sugar, vinegar, and spices in large pot; bring to a boil. Add vegetables, return to boil; reduce heat and simmer 10 minutes.Pack hot mixture into hot sterilized jars, leaving 1/4-inch head space. Remove air bubbles; wipe jar rims, cover at once with metal lids and screw on bands. Turn jars upside down on table over night to seal lids.
