Sweet corn salsa
Ingredients/Components
- salt - 1/4 tsp
- black pepper - 1/8 tsp
- tomatoes, seeded and diced - 1/4 c
- cilantro, chopped - 2 Tbsp
- small jalapeno, seeded and minced - 1 item
- fresh corn kernels - 2 c
- rice wine vinegar - 1/4 c
- red onion, minced - 2 Tbsp
- sweet butter cold, cut in pieces - 3 Tbsp
How to make sweet corn salsa:
Cut raw corn off cobs. Combine all ingredients in saucepan over high heat and stir while bringing salsa to a boil. When butter has melted completely and takes on look of light butter sauce, remove from heat and serve immediately. Makes 3 cups.Note: May be used as accompaniment to barbecue beef dinner or as a side dish.
