Ingredients/Components

  • salt - 1/4 tsp
  • black pepper - 1/8 tsp
  • tomatoes, seeded and diced - 1/4 c
  • cilantro, chopped - 2 Tbsp
  • small jalapeno, seeded and minced - 1 item
  • fresh corn kernels - 2 c
  • rice wine vinegar - 1/4 c
  • red onion, minced - 2 Tbsp
  • sweet butter cold, cut in pieces - 3 Tbsp

How to make sweet corn salsa:

Cut raw corn off cobs. Combine all ingredients in saucepan over high heat and stir while bringing salsa to a boil. When butter has melted completely and takes on look of light butter sauce, remove from heat and serve immediately. Makes 3 cups.

Note: May be used as accompaniment to barbecue beef dinner or as a side dish.
