Ingredients/Components
- sugar - 8 c
- salt - 2 Tbsp
- vinegar - 1 qt
- whole pickling spices - 2 Tbsp
- cucumbers 5 inches long - 14 item
How to make sweet chunk pickles:
Wash cucumbers. Pour boiling water over; let stand overnight. Drain. On four consecutive days, repeat the process. Add fresh boiling water and drain. On the fifth day, cut drained cucumbers into 1/4-inch slices.Combine vinegar, sugar and spices (tied in a bag) and salt. Heat to boiling, using a 6-quart pan. Pour over cucumber slices. Repeat process three more days. On last day, pack the cucumber slices in sterile jars. Heat the vinegar syrup to boiling, discard spice bag and pour over the slices in jars, filling them to the top. Seal immediately. Makes 6 pints.
