Ingredients/Components

  • salt - 1/4 tsp
  • soy sauce - 1 Tbsp
  • rice vinegar - 1/4 c
  • plus 1 tsp - 1 Tbsp
  • green bell pepper strips - 3/4 c
  • sliced onion, separated into rings - 1/4 c
  • pineapple juice no sugar added - 2/3 c
  • boned, cooked pork, cut into 1-inch cubes - 8 oz
  • canned pineapple chunks no sugar added - 2 c

How to make sweet and sour pork:

In 2-quart microwave-safe casserole, combine pork cubes, pineapple chunks, bell pepper, celery, mushrooms and onion rings; toss to combine. In small bowl, combine pineapple juice, vinegar, cornstarch, soy sauce and salt, stirring to dissolve cornstarch. Pour over pork mixture. Cover with plastic wrap and microwave on High for 10 minutes, stirring once or twice during cooking, until thoroughly heated. Let stand for 5 minutes before serving. Cooking time may be different in your microwave oven. To help ensure good results, be sure to check for doneness while cooking.
