Sweet and sour meatballs
Ingredients/Components
- ground beef - 1 lb
- 1/2 slices bread, finely chopped - 1 item
- egg - 1 item
- salt - 1/2 tsp
- pepper - 1/4 tsp
- chicken broth - 1 c
- large green pepper, seeded and chopped - 1 item
- can pineapple chunks - 1 lb
- cornstarch - 3 Tbsp
- sugar - 1/2 c
- vinegar - 1/2 c
- pineapple juice - 1/2 c
- soy sauce - 2 Tbsp
How to make sweet and sour meatballs:
This is a tasty variation of that old standby meatballs. To save time, you can mix the meatballs ahead of time and refrigerate until ready to prepare.Mix beef, bread, egg, salt and pepper. Shape into 1-inch balls. Brown in skillet, using a small amount of oil. Remove meatballs from pan and discard all but 1 tablespoon fat. Drain pineapple, reserving juice. Add 1/2 cup of broth, peppers and pineapple to skillet. Cover and cook over medium heat 10 minutes. In a small bowl, mix cornstarch and sugar. Add vinegar, pineapple juice, soy sauce and remaining chicken broth to mixture. Blend. Pour into skillet with peppers and pineapple. Bring to boil and simmer until thick. Return meatballs to skillet. Simmer until heated. Serve over rice.
