Sweet and sour meatballs
Ingredients/Components
- salt - 1 tsp
- egg, slightly beaten - 1 item
- cider vinegar - 2/3 c
- brown sugar, packed - 1/3 c
- catsup - 2/3 c
- fine bread crumbs - 1/4 c
- lean ground beef - 1 lb
- finely chopped onion - 2 Tbsp
- pineapple juice - 1/3 c
- can pineapple chunks, drained - 1 1/2
How to make sweet and sour meatballs:
Saute onion in butter until transparent. Do not brown. Mix together ground beef, salt, bread crumbs, egg and pineapple juice. Add onion. Form into bite size balls. Place on rack and bake 20 minutes at 350°.In large skillet, mix catsup, vinegar, brown sugar and pineapple chunks. Bring to a boil over medium heat. Add cooked meatballs. Cover and simmer 10 minutes. Serve in hot chafing dish.
