Sweet-and-sour meatballs
Ingredients/Components
- packed brown sugar
- salt - 1 tsp

- cornstarch - 2 Tbsp
- vinegar - 1/3 c
- ground nutmeg - 1/4 tsp
- pepper - 1/8 tsp
- sliced green onions - 1/3 c
- soy sauce - 1 Tbsp
- minced onion - 2 Tbsp
- lean ground beef
- eggs, slightly beaten - 2 item
- seasoned bread crumbs - 3/4 c
- can pineapple chunks, undrained - 1 oz
- green pepper, cut into strips - 1 item
- hot cooked rice optional - 1 item
How to make sweet-and-sour meatballs:
Sauce:1/2 c. packed brown sugar2 Tbsp. cornstarch1 (20 oz.) can pineapple chunks, undrained1/3 c. sliced green onions1/3 c. vinegar1 Tbsp. soy sauce1 green pepper, cut into strips hot cooked rice (optional) In a large bowl, combine the first 8 ingredients; mix well. Shape into 2 dozen (1 1/2-inch) balls. Place in a greased 2-quart casserole. For sauce, mix brown sugar and cornstarch in a saucepan. Add pineapple and juice, green onions, vinegar and soy sauce; cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Pour over the meatballs. Cover and bake at 350° for 40 minutes. Stir in green pepper. Return to the oven, covered, for 10 minutes. Serve over rice, if desired. Yield: 6 to 8 servings.Recipe categories: Meat, Ground beef, Beef.
