Sweet and sour chicken
Ingredients/Components
- cornstarch - 1 Tbsp
- vegetable oil - 2 Tbsp
- brown sugar, packed - 1 Tbsp
- ground ginger - 1 tsp
- soy sauce - 2 Tbsp
- garlic cloves, minced - 2 item
- cooked rice - 2 c
- white vinegar - 3 Tbsp
- chicken breast - 15 oz
- drained pineapple chunks - 1 c
- stir-fry vegetable mix - 1 pkg
How to make sweet and sour chicken:
In large skillet, place chicken breast that is boneless, skinless and cut into 1-inch cubes. Add oil. Cook, over medium-high heat, stirring occasionally, until lightly browned (about 3 minutes). Add stir-fry vegetable mix and garlic. Cook, stirring frequently, 2 minutes longer.In a small bowl, combine reserved pineapple juice, 2 tablespoons water and remaining ingredients, except for rice. Pour over chicken mixture and stir in pineapple chunks. Cook until just boiling (about 2 minutes). Serve over rice.
Yield: 4 servings. Fat: 9 grams.
