Ingredients/Components

  • milk - 1/2 c
  • sour cream - 1 c
  • salt
  • butter - 2 Tbsp
  • nutmeg - 2 tsp
  • eggs, beaten - 3 item
  • dry mustard - 1 tsp
  • paprika - 2 tsp
  • pepper - 1/4 tsp
  • ground beef - 1 lb
  • bread crumbs - 2 c
  • tomato paste - 2 tsp
  • onion, minced - 1 item
  • bouillon or soup stock - 2 c
  • ground pork - 1/4 lb
  • ground veal - 1/4 lb
  • Soak bread crumbs in milk
  • aromatic bitters optional - 1 tsp
  • beef concentrate - 1 tsp

How to make swedish meatballs:

Grind meat together twice. Soak bread crumbs in milk. Add meat, mix. Saute onion in large skillet in 2 tablespoons butter. Mix together seasonings, eggs, onion and meat in bowl. Mix well; form into 48 small balls. Melt butter in skillet; brown meatballs on all sides. Remove; set aside to make sauce.Sauce For Swedish Meatballs:1/4 tsp. minced garlic5 Tbsp. butter2 tsp. tomato paste1 tsp. beef concentrate2 c. bouillon or soup stock1 tsp. aromatic bitters (optional)1 c. sour cream Add garlic and 1 tablespoon butter to fat left in skillet. Saute 1 minute. Blend in 4 more tablespoons butter, tomato paste, beef concentrate and stock. Add bitters; stir mixture over low heat until it thickens. Pour into lighted chafing dish. Stir in sour cream. Add meatballs to sauce, stirring once or twice to be sure all heats through. Yields 48 meatballs.

Note: This recipe improves if made one day ahead of time.
