Swedish fruit soup
Ingredients/Components
- sugar - 1/2 c
- cold water - 6 c
- dried apricots - 3/4 c
- tapioca - 3 Tbsp
- apple, peeled and diced - 1 item
- stick cinnamon - 1 item
- dried prunes - 3/4 c
- raisins golden preferred - 1/2 c
- pear, peeled and diced - 1 item
- lemon slices, 1/4-inch thick - 2 item
- oranges, peeled and diced a smidgen of zest is nice - 2 item
- a slug of brandy or rum or a liqueur to taste optional - 1 item
How to make swedish fruit soup:
Soak dried apricots, prunes and raisins in cold water for 30 minutes. Add cinnamon stick, lemon slices, tapioca and sugar. Bring to a boil. Cover and simmer 10 minutes, stirring occasionally. Stir in orange, apple and pear cubes. Simmer until apple pieces are tender, about 5 minutes. Stir in the booze. Pour into large serving bowl and cool to room temperature. Remove cinnamon stick.
