  • pkg - 2 oz
  • nuts, chopped - 1/2 c
  • finely chopped celery - 1 c
  • heavy cream, whipped - 1/2 pt
  • large can crushed pineapple - 1 item
  • lemon gelatin - 1 pkg

How to make sunshine salad:

Drain pineapple. Heat juice and add gelatin. Let cool until slightly set. Beat gelatin with electric beater until smooth. Fold in pineapple, celery, nuts, cream cheese and beaten cream (unsweetened). Pour mixture into glass bowl and refrigerate.
