  • salt - 1/2 tsp
  • nutmeg - 1 tsp
  • margarine, melted - 3 Tbsp
  • white pepper - 1/2 tsp
  • orange or lemon juice - 2 Tbsp
  • fish filet flounder, cod or your choice - 1 item
  • orange or lemon rind, grated - 1 Tbsp

How to make sunshine fish:

Mix together melted margarine, juice, grated rind, salt, pepper and nutmeg. Place filet on a piece of aluminum foil in a shallow baking dish. Baste filet with sauce, using all of it. Fold foil over fish. Bake at 325° for 25 minutes. Test for doneness. Using a fork, if fish flakes, it is done. Do not overcook. Yield: 1 filet for this mixture.
